2 lbs peeled carrots (I used Costco’s fancy rainbow carrots) 1 Tbsp neutral oil 1 tsp salt 1 Tbsp brown sugar 2 Tbsp honey 1 Tbsp fresh chopped thyme 1 Tbsp finely chopped shallot 3 Tbsp unsalted butter 3 Tbsp Marsala wine

👨‍🍳 Instructions 👨‍🍳

1) Preheat your oven to 400°F. 2) In a baking dish, toss the peeled carrots with oil and salt until evenly coated. 3) Roast for 30–40 minutes, or until the carrots are tender and beginning to caramelize around the edges. 4) In a large sauté pan, melt the butter over medium heat and add the shallot. Cook until translucent and fragrant, about 5 minutes. 5) Stir in the honey and brown sugar, letting them melt together into the butter mixture. 6) Pour in the Marsala wine and cook for 2–3 minutes, allowing the alcohol to burn off and the glaze to reduce slightly. 7) Add the fresh thyme and stir for 1 minute to release its aroma. 8) Add the roasted carrots to the pan and toss to coat them evenly in the glaze. Let them reheat and absorb the sauce for another 2–3 minutes. 9) Transfer to a serving platter and drizzle any remaining glaze from the pan over the top.
