If you are looking for game day food that actually delivers, this buffalo chicken dip is it. I have eaten a lot of buffalo chicken dips over the years, and this one is hands down my favorite. It is creamy, spicy, savory, and somehow still leaves you wanting another bite instead of feeling weighed down.
The secret ingredient here is celery. Finely chopping it and folding it right into the dip adds these little crisp pops of freshness that cut through the richness and keep everything balanced. It might sound small, but it completely changes the experience and makes the dip way more craveable.
I always mix the cream cheese, mayonnaise, seasonings, and hot sauce together first to get the sauce perfectly smooth before adding the chicken, celery, and cheese. That extra step makes a big difference in texture and keeps the dip creamy all the way through. Once it bakes, it turns hot, bubbly, and irresistible.
Serve it with sturdy tortilla chips, bagel chips, or veggies and watch it all disappear, enjoyyy! ❤️
1) Preheat oven to 375°F. Lightly grease a baking dish and set aside.
2) In a large mixing bowl, add the room temperature cream cheese, mayonnaise, Frank’s RedHot Sauce, chicken bouillon, garlic powder, onion powder, paprika, and dried parsley. Begin mixing with a spatula to break up the cream cheese, then switch to a whisk and continue mixing until the sauce is completely smooth and cohesive with no lumps remaining.
3) Prepare the celery by slicing each rib lengthwise into quarters, then chopping crosswise into 1/4 inch pieces.
4) Add the shredded chicken, freshly grated cheddar cheese, and chopped celery to the bowl with the sauce base. Mix thoroughly until all components are evenly coated and well distributed throughout the mixture.
5) Transfer the buffalo chicken mixture into the prepared baking dish and spread into an even layer.
6) Bake at 375°F for 20–30 minutes, or until the dip is fully heated through, bubbling around the edges, and lightly browned on the surface.
7) Remove from the oven and allow the dip to cool for about 5 minutes before serving. This brief rest helps the dip set slightly and makes it easier to scoop.
8) Serve hot with tortilla chips, celery sticks, carrots, or any sturdy chip of your choice.
