Taco Bell’s nacho fries are insanely addictive, and the seasoning is the entire reason why. That bold, savory, slightly tangy flavor is what makes them impossible to stop eating, so I knew I had to crack it as part of my Taco Bell series.

After a lot of testing, this seasoning blend finally hits exactly right. The key to that signature zesty pop is citric acid, which gives the fries that bright, almost mouthwatering finish Taco Bell is known for. If you don’t have citric acid on hand, lemon pepper works as a great substitute and still gets you really close.

I like to cook my favorite fries until crispy, toss them in the seasoning while they’re hot, then pop them back in the oven for a few minutes so the flavor really sticks. That extra step makes a big difference and gives you fries that taste seasoned all the way through, not just dusted on top.

🧾 Ingredients 🧾


4 tablespoons cheese powder
1 tablespoon white granulated sugar
2 teaspoons lemon pepper seasoning
2 teaspoons ground cumin
1 teaspoon ground coriander
1 tablespoon paprika
1 tablespoon garlic powder
1 tablespoon onion powder
2 teaspoons cayenne pepper
2 teaspoons salt
1/2 teaspoon citric acid

Substitution Note:
If citric acid is unavailable, increase the lemon pepper seasoning by an additional 1/2 teaspoon.

👨‍🍳 Instructions 👨‍🍳


1) Add the cheese powder, sugar, lemon pepper seasoning, cumin, coriander, paprika, garlic powder, onion powder, cayenne pepper, salt, and citric acid to a bowl. Whisk thoroughly until the seasoning blend is completely uniform.

2) Cook your fries using your preferred method until hot and crispy. Immediately toss the hot fries with a generous amount of the seasoning blend so it adheres evenly.

3) Return the seasoned fries to the oven or air fryer for just a few minutes to help the seasoning set. Watch closely and avoid overcooking, as the sugar and cheese powder can burn if exposed to high heat for too long.
