Baja Sauce (Pepperjack Sauce)
Do you remember Taco Bell’s Baja Sauce from the early 2000s? Not the bottled version in stores, I mean the real one Taco Bell used to put on their food before Spicy Ranch took over. It was creamy, tangy, a little zesty, and it had that pepperjack vibe that made quesadillas and burritos so good.
I have had so many people ask me for a dupe, and I get it because this is one of those sauces that completely changes whatever you put it on. My version is super easy to make and tastes way closer than the bottled stuff in stores. Blend it, let it chill for a bit so the flavor settles and the texture thickens, and then use it on everything; tacos, burritos, quesadillas, fries, whatever you are eating, it works, enjoyyy! ❤️

🧾 Ingredients 🧾
1 cup mayonnaise
1 large jalapeño (seeds and pith removed)
1/4 teaspoon ground mustard powder
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon chili powder
1 teaspoon paprika
1 teaspoon granulated white sugar
Juice of 1 lime (about 2 tablespoons)
1 teaspoon kosher salt
2 ounces parmesan cheese
2 ounces pepper jack cheese or Monterey jack cheese
3 tablespoons Milk
👨🍳 Instructions 👨🍳
1) Add all ingredients to a blender or food processor and blend until completely smooth.
2) Transfer the sauce to an airtight container and refrigerate for at least 1 hour. This allows the sauce to thicken and gives the flavors time to develop.
Notes: Sauce can be stored in an airtight container in the refrigerator for 4 to 5 days.
