Greek Quinoa Salad
I lost over 100lbs and one of my secrets was prioritizing flavor, because if the food isn't delicious, it's difficult to stick with a weight loss journey. This Greek Quinoa Salad has gotten me through so much, it's high in protein, keeps you full and has a decent amount of fiber! It's the perfect salad for meal preps, picnics and potlucks because it's refreshing, vibrant and crisp!
You can customize with other vegetables like spinach, bell peppers, olives, really whatever vegetables bring you the most joy!

๐งพ Ingredients ๐งพ
1 cup uncooked quinoa
2 cups boiling water
1 teaspoon kosher salt
1 English cucumber, sliced into semi-circles
10 ounces cherry tomatoes, halved
1/2 red or white onion, finely chopped
1 and 1/2 cups fat free Greek yogurt
Juice of 1 lemon
1 tablespoon Greek seasoning
5 ounces fat free or reduced fat feta
1 teaspoon white sugar
Black pepper, to taste
1–2 teaspoons kosher salt (depending on taste)
2 tablespoons fat free milk
Optional Add-ins:
Chopped parsley
Chopped olives
Chopped bell peppers
๐จ๐ณ Instructions ๐จ๐ณ
1) Rinse the quinoa thoroughly under cold running water using a fine mesh strainer.
2) Transfer the rinsed quinoa to a medium saucepan. Add the boiling water and 1 teaspoon of kosher salt. Bring to a boil over high heat, then reduce to a low simmer, cover, and cook for 20 minutes.
3) Once cooked, fluff the quinoa gently with a fork and let it cool to room temperature. For faster cooling, spread it out on a baking sheet.
4) In a large mixing bowl, whisk together the Greek yogurt, milk, lemon juice, Greek seasoning, sugar, salt, and black pepper until smooth. Taste and adjust salt as needed, see note below.
Important Note: If your Greek seasoning already contains salt, you may not need the additional 1-2 teaspoons of salt.
5) Add the cooled quinoa, cucumbers, cherry tomatoes, onion, and feta to the bowl. Mix everything together until well coated in the dressing.
6) Cover and refrigerate for at least 1 hour to let the flavors come together. Give it a good stir before serving. Some light moisture separation is completely normal.
