 White Bean Alfredo Sauce


Over 100 pounds down and I still eat pasta! This Creamy White Bean Alfredo is the ultimate healthy smart swap; packed with fiber and protein, but it tastes completely decadent. There is absolutely zero heavy cream in this sauce; we are just blending navy beans into an incredibly rich, macro-friendly masterpiece. If you are on a weight loss journey but refuse to eat salads, this is for you!

๐Ÿงพ Ingredients ๐Ÿงพ


2 tablespoons extra virgin olive oil

1/2 Medium Onion, finely minced

1/2 teaspoon kosher salt

2–3 garlic cloves, minced

1 (15-ounce) can White Beans, drained (I'm using Navy Beans)

1 cup vegetable stock

1 teaspoon lemon juice

5 ounces freshly grated Parmesan cheese (about 1 cup grated)

2 teaspoons mushroom broth powder

Freshly ground black pepper, to taste

Pinch of red pepper flakes (optional)

Additional salt, to taste

Your favorite high protein pasta


Optional garnish:

Minced parsley

Additional Parmesan cheese


Notes: Cannellini Beans, Great Northern Beans or Butter Beans can work as a substitute if you cannot find Navy Beans.


๐Ÿ‘จ‍๐Ÿณ Instructions ๐Ÿ‘จ‍๐Ÿณ


1) In a medium saucepan over medium heat, add the olive oil. Once heated, add the minced shallot and salt. Cook for 3–5 minutes, stirring frequently, until softened and translucent. Add the garlic and continue cooking for another 2–3 minutes, until fragrant and soft. Light color is fine but avoid browning.


2) Add the drained white beans, vegetable stock, mushroom broth powder, and lemon juice. Bring to a gentle simmer and cook for 5 minutes to heat the beans through and allow the flavors to meld.


3) Transfer the mixture to a blender. Add the grated Parmesan cheese and blend until completely smooth, about 1–2 minutes. 


4) Pour the blended sauce back into the saucepan over low heat. Add the black pepper and optional red pepper flakes. Stir to combine and gently warm through.


5) Taste and adjust seasoning as needed. The sauce will continue to thicken as it sits. Use reserved pasta water or additional vegetable stock to loosen the sauce to your desired consistency.


6) Toss the sauce with your favorite cooked pasta. Finish with minced parsley and additional Parmesan cheese, if desired.
