It wasn't just the carrots; it was the perfect balance of tart lemon, crushed pineapple, and that signature sweet dressing. 🧾 Ingredients 🧾
1 (8-ounce) can crushed pineapple, including juice
3/4 cup raisins
1/2 cup mayonnaise
3/4 cup white granulated sugar
👨🍳 Instructions 👨🍳
1) Trim, peel, and shred the carrots until you have about 4 and 1/2 cups.
2) In a large mixing bowl, combine the shredded carrots, crushed pineapple with its juice, raisins, lemon juice, mayonnaise, and sugar.
3) Mix thoroughly until everything is evenly coated. Cover and refrigerate for at least 2 hours. The longer it sits, the more the flavors meld and the softer the carrots become.
4) Serve cold.
