🧾 Ingredients 🧾

1 red bell pepper, finely diced (about 3/4 cup)
1 green bell pepper, finely diced (about 3/4 cup)
1 yellow bell pepper, finely diced (about 3/4 cup)
3 jalapeño peppers, finely diced (about 3/4 cup)
1/2 cup apple cider vinegar
0.85 ounce fruit pectin powder
2 1/2 cups granulated white sugar
1/2 teaspoon red pepper flakes (optional, for additional heat)

Note: For a firmer jelly, use 1–1.15 ounces of fruit pectin instead of 0.85 ounce. This recipe produces a softer, more pourable jelly; perfect for appetizers, dipping, charcuterie boards, meat glazes, or as a sandwich and burger spread.

👨‍🍳 Instructions 👨‍🍳

1) In a medium saucepan over medium-high heat, add the diced peppers. Cook for 3–5 minutes, stirring frequently, until slightly softened.

2) Add the apple cider vinegar and fruit pectin. Stir to combine and bring the mixture to a boil.

3) Remove from the heat and add the sugar. Stir until the sugar is completely dissolved.

4) Return the pot to the heat and bring the mixture to a rolling boil, stirring continuously. Boil for 2 minutes.

Note: The mixture may rise and boil aggressively. Do not leave it unattended; hot sugar can be extremely dangerous.

5) Remove from the heat and allow the mixture to cool for about 10 minutes. Carefully pour into clean canning jars or a heat-safe glass container.

6) Let the jelly sit at room temperature for 30 minutes, then transfer to the refrigerator uncovered for several hours.

7) Once fully cooled and set, cover with a lid and store in the refrigerator for up to 4 weeks.

Note: It may take up to 48 hours for the jelly to fully set.
