🧾 Ingredients 🧾

48 tater tots, thawed at room temperature or microwaved until soft
Shredded sharp cheddar cheese, to taste
Sour cream, to taste
Kosher salt, to taste
Bacon bits, to taste
Chives, to taste


👨‍🍳 Instructions 👨‍🍳

1) Preheat the oven to 375°F.

2) Thaw the tater tots so they become soft and pliable. You can leave them at room temperature for about 60 minutes or place them on a microwave-safe plate and microwave for about 3 minutes. If you heat them in the microwave, allow them to cool slightly as they may become too hot to handle.

3) In a non-stick mini muffin pan, place two thawed tater tots in each cavity. Using your fingers or the side of a rolling pin, gently press the tots down to form a potato disk. 

4) Bake for 10–15 minutes, or until the edges begin to brown and the cups start crisping.

5) Remove the pan from the oven and lightly sprinkle the disks with kosher salt. Add bacon bits to each cavity, followed by shredded sharp cheddar cheese. Fill each cup generously but avoid overflowing.

6) Return the pan to the oven and bake for another 5–10 minutes, or until the cheese melts and begins to lightly crisp and the potato disks are golden and crispy.

7) Remove from the oven and let the potato bites cool for a few minutes. Top each with a small dollop of sour cream, additional bacon bits, and chopped chives.

8) Serve warm or at room temperature.
