Cilantro Lime Sauce - Dish with Drew

 Cilantro Lime Sauce

Chipotle's Cilantro Lime sauce was... not very good, in my humble opinion. So let me show you how to make a better version at home, perfect for tacos, quesadillas or one of my other Chipotle dupes like the steak or carnitas, enjoyyy! 😊❤️

🧾 Ingredients 🧾

1 and 1/2 teaspoons kosher salt
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon cumin
2 cups sour cream
1 tablespoon lime juice
1 tablespoon lemon juice
1 cup cilantro
1 cup roasted jalapeños (about 5 large)
1 tablespoon oil (for roasting jalapeños)
1/2 teaspoon kosher salt (for roasting jalapeños)

👨‍🍳 Instructions 👨‍🍳

1) Preheat the oven to 375°F. While the oven is preheating, place the jalapeños in a bowl, drizzle with oil, and sprinkle with 1/2 teaspoon kosher salt. Toss until evenly coated.

2) Transfer the jalapeños to a sheet tray and roast for 15 minutes, or until the skins begin to blister and char slightly. This can also be done on a grill or in an air fryer, the goal is to get some browning on the outside.

3) Remove the jalapeños from the oven and immediately cover with foil or a bowl. Let them steam for 10 minutes to loosen the skins.

4) Peel off the skins, then remove the stems, pith, and seeds. Set aside.

5) In a food processor, add the cilantro, roasted jalapeños, kosher salt, lemon juice, and lime juice. Pulse until finely chopped.

6) Add the sour cream, garlic powder, onion powder, and cumin to the food processor. Continue blending until smooth and fully incorporated, with no large chunks remaining.

7) Transfer to a container and refrigerate for at least 1 hour before serving to allow the flavors to develop.
