 Polynesian Sauce Dupe


After working at Chick-fil-A for over 10 years, I’ve had more than my fair share of Polynesian Sauce and now I’ve reverse engineered it so you can make it at home! 🤩 This sweet and tangy sauce combines notes of tomato, vinegar, mustard and spices with that signature smooth, slightly syrupy texture and vibrant red-orange color. Polynesian Sauce is one of Chick-fil-A’s most popular sauces, and it’s perfect for dipping nuggets and waffle fries or adding a sweet and tangy kick to sandwiches and wraps. What makes it so addictive is the balance of sweetness and acidity, with just enough savory flavor to keep it from tasting like a typical sweet-and-sour sauce. After plenty of testing, this copycat recipe is my take on recreating that iconic flavor right in your own kitchen, enjoyyy! ❤️

🧾 Ingredients 🧾


3/4 cup plus 1 tablespoon granulated sugar
3/4 cup vegetable or canola oil
1/2 cup water
1/4 cup light corn syrup
1/4 cup apple cider vinegar
1/4 cup distilled white vinegar
1 and 1/2 tablespoons tomato paste
1 tablespoon kosher salt
2 teaspoons paprika
1 teaspoon mustard powder
1 teaspoon cornstarch
1/8 teaspoon beetroot powder
1/8 teaspoon onion powder
1/8 teaspoon garlic powder
1 tablespoon tomato powder



👨‍🍳 Instructions 👨‍🍳


1) Combine all ingredients in a medium saucepan and whisk until thoroughly combined. Optionally, blend the ingredients before transferring them to the saucepan for a smoother mixture.

2) Bring the mixture to a boil over medium heat, stirring frequently. Once boiling, continue cooking for 5 minutes, stirring frequently and watching carefully to prevent it from boiling over. The mixture will be extremely hot, so use caution.

3) Remove from the heat and allow the sauce to cool for about 15 minutes, or until warm but no longer piping hot.

4)Carefully transfer the sauce to a blender and blend for about 60 seconds, until completely smooth and emulsified.

5) Transfer the sauce to an airtight container or sauce bottle and refrigerate for 2–3 hours, or until completely chilled. The sauce will continue to thicken as it cools.

6) Serve chilled with chicken, fries, sandwiches or anywhere you would normally use Polynesian sauce.

Storage: Store leftover sauce in an airtight container in the refrigerator for up to 2 weeks. Shake or stir before serving if needed.
